Ingredients

  • Mopur® Crunch 100% vegetable flakes with Chicken flavour
  • 4 medium courgettes
  • 1 spring onion
  • 1 small potato
  • 1 tuft of fresh basil
  • 400 ml vegetable stock
  • 70 g vegetable sour cream (or Greek yoghurt)
  • extra virgin olive oil
  • Pumpkin seeds to taste
  • Salt and pepper to taste

Method

A fresh and creamy velouté, ideal for a light lunch or detox dinner. The basil adds fragrance and character, while the sour cream adds a sour note that goes perfectly with the crunchy touch of the 100% vegetable-flavoured Mopur®Crunch chicken flakes.

How to replace sour cream? Try Greek yoghurt.

Procedure:

  1. In a saucepan, brown the sliced spring onion with a little oil.
  2. Add the courgettes and diced potato, then cover with vegetable stock.
  3. Cook for about 20 minutes until the vegetables are tender.
  4. Add the basil, season with salt and pepper, then blend until smooth.
  5. In the meantime, heat a frying pan with a little oil and sauté Mopur® Crunch with Chicken flavour to make it crispy.
  6. Serve garnished with a spoonful of sour cream, pumpkin seeds and a handful of Mopur® Crunch to add a touch of vegetable protein to your recipe.
