Ingredients
- Mopur® Crunch 100% vegetable flakes with Chicken flavour
- 4 medium courgettes
- 1 spring onion
- 1 small potato
- 1 tuft of fresh basil
- 400 ml vegetable stock
- 70 g vegetable sour cream (or Greek yoghurt)
- extra virgin olive oil
- Pumpkin seeds to taste
- Salt and pepper to taste
Method
A fresh and creamy velouté, ideal for a light lunch or detox dinner. The basil adds fragrance and character, while the sour cream adds a sour note that goes perfectly with the crunchy touch of the 100% vegetable-flavoured Mopur®Crunch chicken flakes.
How to replace sour cream? Try Greek yoghurt.
Procedure:
- In a saucepan, brown the sliced spring onion with a little oil.
- Add the courgettes and diced potato, then cover with vegetable stock.
- Cook for about 20 minutes until the vegetables are tender.
- Add the basil, season with salt and pepper, then blend until smooth.
- In the meantime, heat a frying pan with a little oil and sauté Mopur® Crunch with Chicken flavour to make it crispy.
- Serve garnished with a spoonful of sour cream, pumpkin seeds and a handful of Mopur® Crunch to add a touch of vegetable protein to your recipe.
