Ingredients

  • 300g of gluten-free veggie slices
  • 100g diced watermelon
  • 50g chopped walnuts
  • 3-4 figs
  • 50g of pitted black olives
  • fresh basil
  • 1 cucumber
  • olive oil
  • salt
  • pepper

Method

In a small bowl, mix the diced watermelon with the diced cucumber. Season with a drizzle of oil, salt and pepper. Serve on a platter together with veggie deli slices, chopped walnuts, sliced figs and black olives. Complete with fresh basil to enhance flavour.
